Creamy Salmon Florentine with Spinach and Mushrooms 🍣🍄
Ingredients:
4 salmon fillets
2 tablespoons olive oil
Salt and pepper to taste
1 onion, finely chopped
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
4 cups fresh spinach
1 cup sliced mushrooms
1/4 teaspoon ground nutmeg
Juice of 1 lemon
Instructions:
Preheat oven to 375°F (190°C). Season salmon fillets with salt and pepper.
In a large ovenproof skillet, heat olive oil over medium-high heat. Add salmon fillets, skin side up, and sear for 2-3 minutes on each side until golden brown. Remove and set aside.
In the same skillet, add the chopped onion and garlic, and sauté for 2-3 minutes until translucent. Add the sliced mushrooms and cook for another 3-4 minutes until they start to soften.
Pour in the heavy cream and chicken broth, stirring well to combine. Bring to a simmer and cook for 5 minutes until the sauce starts to thicken.
Add the Parmesan cheese, ground nutmeg, and lemon juice, stirring to combine. Add the fresh spinach and cook until wilted, about 2 minutes.
Return the salmon fillets to the skillet, spooning some of the sauce over them. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the salmon is cooked through and the sauce is bubbly. Serve hot, garnished with additional Parmesan cheese if desired.
