Grilled Ribeye Steak with Loaded Baked Potatoes
Ingredients:
For the Ribeye Steak:
1 large ribeye steak (bone-in or boneless)
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon butter
2 cloves garlic, smashed
1 sprig fresh rosemary or thyme
For the Loaded Baked Potatoes:
2 large russet potatoes
½ cup sour cream
½ cup shredded cheddar cheese
2 tablespoons butter
4 strips bacon, cooked and crumbled
2 green onions, chopped
Salt and pepper to taste
For the Roasted Potatoes (Optional Side):
1 cup baby potatoes, halved
1 tablespoon olive oil
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons shredded Parmesan cheese
1 tablespoon chopped fresh parsley
Instructions:
Prepare the Loaded Baked Potatoes:
Preheat oven to 400°F (200°C).
Wash and dry the potatoes, then pierce them several times with a fork.
Rub with olive oil and sprinkle with salt. Bake directly on the oven rack for 50–60 minutes, until fork-tender.
Remove from the oven, slice open, and fluff the inside with a fork.
Mix in butter, sour cream, salt, and pepper, then top with cheese, bacon, and green onions.
Prepare the Roasted Potatoes (Optional Side):
Preheat oven to 400°F (200°C) if not already heated.
Toss baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Place in a foil packet or baking dish and roast for 25–30 minutes until golden and tender.
Sprinkle with Parmesan cheese and fresh parsley before serving.
Grill the Ribeye Steak:
Preheat grill or cast-iron skillet over high heat.
Pat the steak dry and rub with olive oil, salt, pepper, garlic powder, and smoked paprika.
Place the steak on the grill and cook for 4–5 minutes per side for medium-rare, adjusting for desired doneness.
During the last minute, add butter, garlic, and rosemary, spooning the melted butter over the steak.
Remove from heat and let rest for 5 minutes before slicing.
Serving:
Arrange the sliced steak on a dark wooden cutting board.
Serve with the loaded baked potatoes and roasted potatoes on the side.
