Sheet Pan Garlic Butter Salmon and Veggies 🧄🍣

Ingredients:
- 4 salmon fillets
- 1 pound baby potatoes, halved
- 1 bunch asparagus, trimmed
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 3 tablespoons melted butter
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges, for serving

Directions:
1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
2. In a small bowl, mix melted butter, olive oil, minced garlic, Italian seasoning, salt, and black pepper.
3. Toss the halved baby potatoes with half of the garlic butter mixture, and spread them on the baking sheet. Roast for 10 minutes.
4. Remove the tray from the oven. Add the asparagus and cherry tomatoes. Drizzle them with some of the remaining garlic butter and toss gently.
5. Place the salmon fillets on the sheet pan, skin-side down. Brush the tops of the salmon with the rest of the garlic butter mixture.
6. Return the pan to the oven and roast for 12-15 minutes, or until the salmon is cooked through and the vegetables are tender.
7. Garnish with freshly chopped parsley and serve with lemon wedges.
