Sizzling chicken rice bake — easy & loaded with flavor!
Fiesta Chicken Rice Bake
Ingredients:
2 cups cooked rice
2 chicken breasts, grilled and sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tsp chili powder
1/2 tsp cumin
1 tsp garlic powder
Salt & pepper to taste
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup sour cream
Fresh cilantro for garnish
Directions:
1. Preheat oven to 375°F (190°C).
2. In a pan, sauté bell peppers with a bit of oil until tender.
3. Season grilled chicken with chili powder, cumin, garlic powder, salt, and pepper.
4. In a baking dish, layer cooked rice, sautéed peppers, seasoned chicken, and cheese.
5. Bake for 10-15 minutes until cheese is melted and bubbly.
6. Top with a dollop of sour cream and fresh cilantro.
