Grilled Swordfish with Lemon Herb Orzo
Mediterranean Swordfish Steaks with Citrus-Infused Herb Orzo
Ingredients:

4 swordfish steaks (6 oz each)
2 tablespoons olive oil, plus more for brushing
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
Zest and juice of 2 lemons
1 teaspoon honey
Salt and freshly ground black pepper
2 cups orzo pasta
4 cups vegetable broth
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted and halved
1/2 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh mint, chopped
1/2 cup feta cheese, crumbled
1/4 cup pine nuts, toasted
Baby spinach leaves for serving (optional)

Directions:

In a shallow dish, combine 2 tablespoons olive oil, half the minced garlic, half the herbs (thyme and rosemary), half the lemon zest, 2 tablespoons lemon juice, honey, salt, and pepper.
Add the swordfish steaks to the marinade, turning to coat. Cover and refrigerate for 30 minutes (but no longer than 1 hour as the acid in the lemon juice will start to "cook" the fish).
While the fish marinates, bring the vegetable broth to a boil in a medium saucepan. Add the orzo and cook until al dente, about 8-9 minutes, or according to package instructions. Drain well.
In a large bowl, combine the cooked orzo, remaining garlic, remaining herbs, remaining lemon zest, 3 tablespoons lemon juice, cherry tomatoes, olives, parsley, dill, mint, feta cheese, and pine nuts. Toss gently to combine. Season with salt and pepper to taste. Cover to keep warm.
Preheat grill to medium-high heat. Oil the grates well to prevent sticking.
Remove swordfish from marinade and brush with additional olive oil. Discard the marinade.
Grill swordfish for 4-5 minutes per side, or until it reaches an internal temperature of 145°F (63°C) and flakes easily with a fork. The fish should be opaque throughout.
To serve, place a bed of the lemon herb orzo on each plate and top with a grilled swordfish steak. Garnish with additional herbs, lemon wedges, and a sprinkle of pine nuts if desired.
