Fresh Ravioli with Asparagus & Cherry Tomatoes 🍝🍅
Ingredients:
- Fresh ravioli
- Asparagus, trimmed and cut into pieces
- Cherry tomatoes, halved
- Olive oil
- Garlic, minced
- Parmesan cheese, grated
- Salt
- Black pepper
- Fresh basil, chopped
Instructions:
1. Fill a large pot with water and bring it to a boil. Add a pinch of salt.
2. Cook the fresh ravioli according to the package instructions, usually about 3 to 4 minutes until they float to the top. Drain and set aside.
3. In a large skillet, heat a drizzle of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
4. Toss in the asparagus pieces and sauté for about 3 to 4 minutes until they start to soften.
5. Add the halved cherry tomatoes and cook for 2 more minutes until they are slightly blistered.
6. Gently fold in the cooked ravioli, mixing everything together. Season with salt and black pepper to taste.
7. Serve with a sprinkle of grated Parmesan cheese and freshly chopped basil on top.
