Coffee Cookies
Ingredients:
1/2 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup unsalted butter, softened
1 cup brown sugar, packed
2 tbsp instant coffee granules (or espresso powder)
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips (optional, for mocha flavor)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
Cream the Butter and Sugars:
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).
Add the Egg and Coffee:
Beat in the egg and vanilla extract.
Dissolve the instant coffee granules in 1 tablespoon of warm water (optional for smoother blending) and mix into the batter.
Mix the Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips if you’re adding them for a mocha twist.
Scoop the Dough:
Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake the Cookies:
Bake for 10-12 minutes, or until the edges are lightly golden. The centers will look slightly soft but will firm up as the cookies cool.
Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
