Chocolate Chip Cookie Parfait
Ingredients:
For the Cookie Base:
- 1 cup chocolate chip cookies, roughly chopped
- 2 tbsp melted butter
For the Chocolate Mousse:
- 1 1/2 cups heavy cream
- 1 cup semi-sweet chocolate chips, melted
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
For the Toppings:
- Whipped cream
- Chocolate chips
- Chocolate sauce
Directions:
1. Start by preparing the cookie base. In a bowl, combine the chopped chocolate chip cookies and melted butter until the mixture is well-coated. Set aside.
2. For the mousse, melt the chocolate chips in the microwave, heating in 30-second intervals and stirring between each until smooth. Let it cool slightly.
3. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
4. Gently fold the melted chocolate into the whipped cream until fully incorporated, creating a rich chocolate mousse.
5. Begin layering the parfait. In each serving glass, add a layer of the cookie mixture at the bottom.
6. Follow with a layer of chocolate mousse, then repeat with more cookie crumbs and mousse.
7. Top with a generous swirl of whipped cream, sprinkle with extra chocolate chips, and drizzle chocolate sauce on top.
8. Chill the parfaits for at least 30 minutes before serving to allow the layers to set.
