Heart Shaped Brownies with Fresh Raspberry Buttercream
Ingredients:
For the Brownies:
• 1/2 cup (1 stick) unsalted butter, melted
• 1 cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 1/3 cup unsweetened cocoa powder
• 1/2 cup all-purpose flour
• 1/4 tsp salt
• 1/4 tsp baking powder
For the Fresh Raspberry Buttercream:
• 1/2 cup unsalted butter, softened
• 2 cups confectioners' sugar
• 1/4 cup fresh raspberries, pureed and strained
• 1/2 tsp vanilla extract
Instructions:
1. Make the Brownies:
1 Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.
2 In a medium bowl, whisk together melted butter, sugar, eggs, and vanilla extract until smooth.
3 Add cocoa powder, flour, salt, and baking powder to the wet ingredients. Mix until just combined.
4 Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
5 Let the brownies cool completely in the pan before removing and cutting.
2. Cut the Brownie Hearts:
1 Use a heart-shaped cookie cutter to cut as many brownie hearts as possible. Set aside.
3. Make the Fresh Raspberry Buttercream:
1 In a mixing bowl, beat the softened butter until smooth and creamy.
2 Gradually add the confectioners' sugar, 1/2 cup at a time, beating well after each addition.
3 Add the strained raspberry puree and vanilla extract. Beat until the frosting is smooth and fluffy.
4. Assemble the Brownie Sandwiches:
1 Transfer the fresh raspberry buttercream to a pastry bag fitted with a round or star tip.
2 Pipe a line of frosting around the inside edge of one brownie heart. Fill in the inside of the line with frosting as well.
3 Top with another brownie heart, gently pressing down to make a sandwich.
4 Repeat with the remaining brownie hearts until all are completed.
5. Serve and Enjoy:�Decorate the tops with extra frosting, sprinkles, or fresh raspberries, if desired.
