Classic Chicken Parmesan
Ingredients:
For the Chicken:
2 large boneless, skinless chicken breasts
Salt and pepper, to taste
1/2 cup all-purpose flour
2 eggs, beaten
1 cup Italian-style breadcrumbs
1/4 cup grated Parmesan cheese
Olive oil, for frying
For the Sauce:
1 1/2 cups marinara sauce (homemade or store-bought)
2 garlic cloves, minced
1 tbsp olive oil
Salt and red pepper flakes, to taste
For Topping:
1 1/2 cups shredded mozzarella cheese
1/4 cup grated Parmesan
Fresh parsley or basil, chopped (for garnish)
Instructions:
Prep Chicken:
Slice chicken breasts in half lengthwise to create 4 thin cutlets.
Season both sides with salt and pepper.
Dredge in flour, dip in egg, then coat in breadcrumb and Parmesan mixture.
Fry Chicken:
Heat oil in a skillet over medium heat.
Fry cutlets until golden and crisp, about 3–4 minutes per side. Drain on paper towels.
Prepare Sauce:
In a saucepan, sauté garlic in olive oil until fragrant. Add marinara, season to taste, and simmer for 5–10 minutes.
Assemble & Bake:
Preheat oven to 400°F (200°C).
Place fried chicken in a baking dish. Spoon marinara over each cutlet.
Top generously with mozzarella and a sprinkle of Parmesan.
Bake for 15–18 minutes until cheese is bubbly and golden.
Serve:
Garnish with fresh parsley or basil. Serve over spaghetti or with a side of garlic bread.
