Better Than Olive Garden Chicken Gnocchi Soup
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 2 cups spinach
- Salt and pepper to taste
- Parmesan cheese for serving
Directions
1. Grab a large pot and warm up some olive oil over medium heat. Toss in the diced onion, carrots, and celery, letting them sauté until they’re nice and soft.
2. Add in the minced garlic, along with the thyme and basil, stirring for another minute to release all those wonderful aromas.
3. Pour in the chicken broth and let it come to a cheerful boil.
4. Lower the heat and mix in the creamy, dreamy heavy cream, the shredded chicken, and gnocchi. Let it all simmer together for about 5 minutes until the gnocchi is perfectly cooked.
5. Stir in the fresh spinach and season with salt and pepper to your liking.
6. Serve it up nice and hot, and don't forget a generous sprinkle of Parmesan cheese on top before diving in!
