🔥 Grilled Chicken with Creamy Herb Sauce, Roasted Potatoes & Mushrooms 🍗🥔🍄

🛒 Ingredients:
For the Chicken & Sauce 🍗:
2 large chicken breasts
2 tbsp olive oil
Salt & pepper to taste
2 tbsp butter
2 garlic cloves, minced
150 ml heavy cream
50 g Parmesan, grated
1 tsp Dijon mustard (optional)
2 tbsp fresh parsley, chopped
For the Roasted Potatoes 🥔:
500 g baby potatoes, halved
2 tbsp olive oil
1 tsp dried rosemary or thyme
Salt & pepper
For the Vegetables 🍄🍅:
200 g mushrooms, sliced
100 g sun-dried tomatoes (or oven-roasted cherry tomatoes)
1 tbsp olive oil
Pinch of salt
👨🍳 Instructions:
Preheat oven to 200°C (400°F). Toss potatoes with oil, rosemary, salt, and pepper, then roast for 25–30 minutes until golden. Halfway through, add mushrooms and sun-dried tomatoes with a little olive oil and roast until tender. Meanwhile, season chicken with salt and pepper, grill or pan-sear in olive oil until golden and cooked through. For the sauce, melt butter in a pan, sauté garlic, then stir in cream, Parmesan, and Dijon mustard. Let simmer until creamy, then mix in parsley. Slice the chicken, drizzle with herb cream sauce, and serve alongside roasted potatoes, mushrooms, and tomatoes.
