4 tablespoons unsalted butter, cubed
For the Meringue:
3 large egg whites
¼ teaspoon cream of tartar
⅓ cup granulated sugar
Instructions:

Step 1: Prepare the Crust
Preheat oven to 325°F (163°C).
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased 9-inch springform pan.
Bake for 10 minutes, then let cool.
Step 2: Make the Cheesecake Filling
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, beating after each addition. Stir in vanilla, sour cream, lemon juice, and zest.
Pour the filling over the cooled crust.

Use a kitchen torch to toast the meringue until golden brown (or place under a broiler for 1-2 minutes).
Chill for 1 hour before slicing and serving.
