Ingredients
2 cups (300g) fresh peaches, peeled, pitted, and diced
1/4 cup (50g) granulated sugar
1 tbsp lemon juice
2 cups (480ml) heavy cream
1 cup (240ml) whole milk
3/4 cup (150g) granulated sugar
1 tsp vanilla extract
A pinch of salt
Instructions
Prepare the Peaches: In a medium bowl, combine the diced peaches, 1/4 cup sugar, and lemon juice. Stir well, then let the mixture sit for 30 minutes to allow the peaches to release their juices.
Blend the Peach Mixture: Transfer the peach mixture to a blender or food processor and pulse until smooth. Set aside.
Make the Ice Cream Base: In a large mixing bowl, whisk together the heavy cream, whole milk, 3/4 cup sugar, vanilla extract, and a pinch of salt until the sugar is fully dissolved.
Combine Peach and Cream Mixtures: Stir the blended peach mixture into the cream base until well combined.
Churn the Ice Cream: Pour the mixture into an ice cream maker and churn according to the manufacturerβs instructions, usually about 20-25 minutes, or until thick and creamy.
