Traditional Cornflake Tart 🥧✨
This nostalgic dessert is a British school dinner classic, with a buttery pastry base, sweet jam filling, and a crunchy cornflake topping. Perfect for a trip down memory lane!
Ingredients:
For the Pastry:
🍚 Plain Flour: 175g
🧈 Unsalted Butter: 100g, cubed
💧 Cold Water: 2–3 tbsp
For the Filling:
🍓 Strawberry or Raspberry Jam: 150g
For the Topping:
🥣 Cornflakes: 100g
🍬 Golden Syrup: 125g
🧈 Unsalted Butter: 50g
🍬 Caster Sugar: 25g
Method:
1. 🔥 Preheat the Oven:
Preheat your oven to 180°C (fan).
2. 🥧 Make the Pastry:
In a bowl, rub the butter into the flour with your fingertips until it resembles breadcrumbs.
Add cold water, a tablespoon at a time, and mix until the dough comes together. Wrap in cling film and chill for 20 minutes.
3. 🥄 Roll Out the Pastry:
Roll the chilled pastry on a floured surface and line a 20cm tart tin. Trim the edges and prick the base with a fork. Line with baking paper, fill with baking beans, and blind bake for 10 minutes.
Remove the paper and beans, then bake for another 5 minutes until golden. Allow to cool.
4. 🍓 Add the Jam:
Spread the jam evenly over the cooled pastry base.
5. 🥣 Make the Cornflake Topping:
In a saucepan, melt the butter, golden syrup, and sugar over low heat, stirring until smooth. Remove from heat and gently fold in the cornflakes until coated.
6. 🥧 Assemble the Tart:
Spoon the cornflake mixture over the jam layer, pressing down lightly to create an even topping.
7. 🔥 Bake the Tart:
Bake for 10 minutes, or until the cornflake topping is golden and crisp.

Allow to cool slightly before slicing. Serve warm or at room temperature with custard or cream.
