TIRAMISU CUPCAKES
INGREDIENTS
For the cupcakes:
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter (room temperature)
2/3 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup whole milk
2 tbsp strong brewed espresso or coffee (cooled)
For the coffee soak:
1/4 cup strong espresso or coffee
1 tbsp coffee liqueur (optional)
1 tbsp sugar
For the mascarpone frosting:
1/2 cup heavy cream (cold)
1/2 cup mascarpone cheese (cold)
1/2 cup powdered sugar
1/2 tsp vanilla extract
To garnish:
Cocoa powder or grated chocolate
INSTRUCTIONS
1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
2. In a bowl, whisk together flour, baking powder, and salt.
3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
4. Add the dry ingredients to the butter mixture, alternating with milk and espresso. Mix until smooth.
5. Fill liners 2/3 full and bake 18–20 minutes or until a toothpick comes out clean. Let cool completely.
To make the soak:
Stir coffee, sugar, and liqueur (if using) until sugar dissolves. Use a skewer to poke holes in cooled cupcakes and brush the soak over each one.
To make the frosting:
Beat cold cream until soft peaks form. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth. Fold whipped cream into mascarpone mixture until combined.
Assembly:
Pipe frosting on soaked cupcakes. Dust with cocoa powder or sprinkle with chocolate shavings. Keep chilled until ready to serve.
