Oatmeal Raisin Carrot Cake Cookies

Ingredients:

Dry ingredients:

1 cup all-purpose flour

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger (optional)

½ tsp baking soda

¼ tsp salt

Wet ingredients:

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 tsp vanilla extract

Add-ins:

1 cup rolled oats

¾ cup finely grated carrot (about 2 small carrots)

½ cup raisins (soaked in warm water for 10 minutes and drained)

½ cup chopped walnuts or pecans (optional)

¼ cup shredded coconut (optional)

Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Whisk flour, cinnamon, nutmeg, ginger, baking soda, and salt in a medium bowl.

In a large bowl, beat butter and sugars together until creamy. Add egg and vanilla; mix until smooth.

Stir in dry ingredients gradually until combined.

Fold in oats, grated carrots, raisins, and any optional add-ins.

Scoop dough by tablespoonfuls onto baking sheet, about 2 inches apart.

Bake 10–12 minutes or until edges are golden and centers are set.

Cool on the sheet for 5 minutes, then transfer to a wire rack.
