Ingredients:
For the crust:
2 cups crushed graham crackers
1/2 cup unsalted butter, melted
2 tablespoons sugar
For the cheesecake filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 ripe bananas, mashed
1 teaspoon vanilla extract
1 1/2 cups cold heavy whipping cream
3 tablespoons powdered sugar
For the toppings:
Sliced banana
Fresh strawberries
Whipped cream
Optional: Chopped nuts (like walnuts or almonds)
Instructions:
Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan. Chill for 20 minutes.
In a large bowl, beat the cream cheese and granulated sugar until smooth and fluffy.
Add the mashed bananas and vanilla extract, mixing until creamy.
In a separate bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
Gently fold the whipped cream into the banana-cream cheese mixture.
Pour the filling over the chilled crust and smooth the top.
Decorate with whipped cream, slice banana, fresh strawberries, sprinkle with chopped nuts if desired.
Refrigerate for at least 6 hours, or overnight for best texture.
