Crispy Golden Potato Pancakes Stuffed with Savory Beef and Melty Cheese
Ingredients:
4 medium russet potatoes, peeled and grated
1 small onion, grated
1/4 cup all-purpose flour
1 egg
Salt and pepper, to taste
1 tablespoon oil (for cooking pancakes)
For the filling:
1 tablespoon olive oil
1/2 pound ground beef
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
1/2 cup shredded mozzarella or cheddar cheese
2 tablespoons chopped fresh parsley (plus more for garnish)
Directions:
Place grated potatoes and onion in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, combine potatoes, onion, flour, egg, salt, and pepper. Mix until well blended.
In a skillet, heat olive oil over medium heat. Add ground beef and season with garlic powder, paprika, salt, and pepper. Cook until browned, about 5–6 minutes. Stir in chopped parsley and set aside to cool slightly.
Take about 2 tablespoons of potato mixture and flatten into a round patty. Place a spoonful of beef and a pinch of cheese in the center. Top with another small portion of potato mixture, sealing the edges to encase the filling.
Heat oil in a non-stick pan over medium heat. Cook each pancake for 3–4 minutes per side or until golden brown and crispy.
Transfer to a plate lined with paper towels. Repeat with remaining mixture.
Garnish with fresh parsley and serve hot with sour cream or dipping sauce of your choice.
