Mac and Cheese Meatloaf Casserole

Ingredients:

1 pound ground beef

1/2 pound ground pork

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup milk

1 egg

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

2 cups elbow macaroni

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

2 cups shredded cheddar cheese

1/2 teaspoon paprika

Fresh parsley, chopped (for garnish)

Directions:

Preheat oven to 375°F (190°C). Grease a 9x13-inch casserole dish.

In a large bowl, combine ground beef, ground pork, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.

Press the meatloaf mixture into the bottom of the prepared casserole dish to form an even layer.

Bake for 20-25 minutes until the meatloaf is mostly cooked through. Remove from the oven and drain excess fat.

Meanwhile, cook macaroni according to package instructions; drain and set aside.

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened, about 3-4 minutes.

Stir in cheddar cheese until melted and smooth. Season with paprika.

Mix cooked macaroni into the cheese sauce, then spoon the mac and cheese over the meatloaf layer.

Bake for an additional 10-15 minutes until bubbly and golden on top.

Garnish with chopped parsley before serving.
