Spiced Salmon with Garlic Potatoes & Cheesy Asparagus
Ingredients:
2 salmon fillets
1 lb baby potatoes, halved
1 bunch asparagus
1 cup shredded mozzarella
Olive oil, garlic, paprika, parsley, salt & pepper
Instructions:
1. Season salmon with olive oil, paprika, salt, and pepper.
2. Roast potatoes with olive oil, garlic, and parsley at 400°F (200°C) for 25 min.
3. Top asparagus with mozzarella, roast for 15 min.
4. Pan-sear or bake salmon for 12–15 min until flaky.
5. Plate and serve hot.
