Cajun Beef Stroganoff Tortellini
Ingredients:
1 lb cheese tortellini (fresh or frozen)
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 teaspoon Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup beef broth
1 cup heavy cream
1/2 cup sour cream
1/2 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the tortellini according to the package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
3. Add the chopped onion and minced garlic to the skillet with the beef, sautéing for 2-3 minutes until softened and fragrant.
4. Stir in the Cajun seasoning, smoked paprika, salt, and black pepper. Cook for another minute to allow the spices to bloom.
5. Pour in the beef broth and bring the mixture to a simmer. Let it cook for 3-4 minutes until the broth reduces slightly.
6. Lower the heat to medium and stir in the heavy cream and sour cream, stirring to combine until the sauce becomes smooth and creamy.
7. Add the cooked tortellini to the skillet, tossing gently to coat in the creamy Cajun beef sauce.
8. Stir in the grated Parmesan cheese until melted and incorporated into the sauce.
9. Serve hot, garnished with chopped fresh parsley.
