ORANGE GINGER HONEY LOAF
Ingredients
For the Loaf:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground ginger
½ tsp ground cinnamon
2 large eggs
½ cup honey
½ cup granulated sugar
½ cup vegetable oil
½ cup orange juice (freshly squeezed)
1 tbsp orange zest
1 tsp vanilla extract
Optional Add-ins:
2 tbsp finely chopped candied ginger
¼ cup chopped walnuts or pecans

For the Honey Orange Glaze:
¼ cup honey
2 tbsp orange juice
½ tsp grated orange zest

Instructions
1. Prepare the Loaf
1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.
2. In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, and cinnamon.
3. In another large bowl, whisk eggs, honey, sugar, oil, orange juice, zest, and vanilla until smooth.
4. Add the dry ingredients to the wet and mix until just combined. Stir in candied ginger and nuts if using.
5. Pour batter into the prepared pan and smooth the top.
6. Bake for 45–55 minutes or until a toothpick comes out clean.
7. Let cool in the pan for 10 minutes, then transfer to a wire rack.
2. Make the Glaze
1. In a small saucepan, combine honey and orange juice. Heat gently until just warm, not boiling.
2. Stir in zest and drizzle over warm loaf.
