Cheesy Garlic Cajun Chicken Tortellini with Velveeta Sauce

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
1 tbsp butter
1 (20 oz) package of frozen cheese tortellini
4 tbsp butter
4 cloves garlic, minced
1 tsp Cajun seasoning
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/4 tsp black pepper
3 cups heavy cream
8 oz Velveeta cheese, cut into cubes
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt to taste

Directions:

In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat. Add the chicken pieces and season with Cajun seasoning, garlic powder, onion powder, paprika, and black pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
Cook the cheese tortellini according to package directions. Drain and set aside.
In the same skillet, melt 4 tbsp butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and bring to a simmer. Reduce heat to low and add the Velveeta cheese and cream cheese. Stir until the cheeses are melted and the sauce is smooth.
Add the cooked tortellini to the cheese sauce and toss to coat. Stir in the cooked chicken.
Add the shredded mozzarella cheese and grated Parmesan cheese and stir until the cheeses are melted and the sauce is thick and creamy.
Season with salt to taste.
Serve immediately.
