๐Ÿ„ 6โ€“8 button mushrooms, sliced or halved

๐ŸŒž 6โ€“8 sun-dried tomatoes (or roasted cherry tomatoes)

๐Ÿซ’ 1 tbsp olive oil (for mushrooms)

๐Ÿง‚ Salt & pepper to taste

For the Creamy Herb Sauce:

๐Ÿง„ 1 garlic clove, minced

๐Ÿงˆ 1 tbsp butter

๐ŸŒฟ 1 tbsp chopped parsley

๐Ÿฅ› 1/2 cup heavy cream or crรจme fraรฎche

๐Ÿง‚ Salt & pepper, to taste

๐Ÿง€ Optional: 2 tbsp grated Parmesan for extra flavor

๐Ÿ‘ฉโ€๐Ÿณ Instructions:

Marinate the chicken: Combine olive oil, garlic, parsley, thyme, salt, and pepper. Coat chicken and marinate for 15โ€“30 minutes.

Cook the potatoes: Boil baby potatoes in salted water for 12โ€“15 minutes until tender. Drain and toss with butter and parsley.

Grill the chicken: Grill chicken on medium-high heat for 6โ€“7 minutes per side until nicely charred and cooked through (internal temp 74ยฐC / 165ยฐF). Rest for 5 minutes, then slice.

Sautรฉ mushrooms: In a skillet, heat olive oil and sautรฉ mushrooms with a pinch of salt and pepper for 6โ€“8 minutes until golden.

Prepare sun-dried tomatoes: If dry, soak in hot water for 10 mins. If packed in oil, drain lightly. Warm through with the mushrooms in the last 2 minutes.

Make the herb sauce: In a small saucepan, melt butter. Add garlic and sautรฉ for 1 minute. Stir in cream and parsley, season to taste, and simmer for 4โ€“5 minutes until slightly thickened. Stir in Parmesan if using.

Assemble: Plate the sliced chicken, baby potatoes, sautรฉed mushrooms, and tomatoes. Spoon herb sauce to the side and garnish with chopped parsley.
