๐ Grilled Herb Chicken with Baby Potatoes, Mushrooms, Sun-Dried Tomatoes & Creamy Herb Sauce ๐ฟ

๐ Ingredients:
๐ 2 boneless chicken breasts
๐ง 1 garlic clove, minced
๐ฟ 1 tbsp chopped fresh parsley (plus extra for garnish)
๐ฟ 1 tsp dried thyme or oregano
๐ซ 2 tbsp olive oil
๐ง Salt & black pepper, to taste
๐ฅ 6โ8 baby potatoes
๐ง 1 tbsp butter (for potatoes)
๐ง Salt for boiling
๐ 6โ8 button mushrooms, sliced or halved
๐ 6โ8 sun-dried tomatoes (or roasted cherry tomatoes)
๐ซ 1 tbsp olive oil (for mushrooms)
๐ง Salt & pepper to taste
For the Creamy Herb Sauce:
๐ง 1 garlic clove, minced
๐ง 1 tbsp butter
๐ฟ 1 tbsp chopped parsley
๐ฅ 1/2 cup heavy cream or crรจme fraรฎche
๐ง Salt & pepper, to taste
๐ง Optional: 2 tbsp grated Parmesan for extra flavor
๐ฉโ๐ณ Instructions:
Marinate the chicken: Combine olive oil, garlic, parsley, thyme, salt, and pepper. Coat chicken and marinate for 15โ30 minutes.
Cook the potatoes: Boil baby potatoes in salted water for 12โ15 minutes until tender. Drain and toss with butter and parsley.
Grill the chicken: Grill chicken on medium-high heat for 6โ7 minutes per side until nicely charred and cooked through (internal temp 74ยฐC / 165ยฐF). Rest for 5 minutes, then slice.
Sautรฉ mushrooms: In a skillet, heat olive oil and sautรฉ mushrooms with a pinch of salt and pepper for 6โ8 minutes until golden.
Prepare sun-dried tomatoes: If dry, soak in hot water for 10 mins. If packed in oil, drain lightly. Warm through with the mushrooms in the last 2 minutes.
Make the herb sauce: In a small saucepan, melt butter. Add garlic and sautรฉ for 1 minute. Stir in cream and parsley, season to taste, and simmer for 4โ5 minutes until slightly thickened. Stir in Parmesan if using.
Assemble: Plate the sliced chicken, baby potatoes, sautรฉed mushrooms, and tomatoes. Spoon herb sauce to the side and garnish with chopped parsley.
๐ Substitutions & Notes:
Use Greek yogurt or light crรจme fraรฎche for a lighter sauce version.
Add roasted bell peppers or zucchini for extra veg.
Chicken can also be pan-seared if no grill is available.
