🥩🇮🇹 Stracotto di Manzo (Italian Beef Stew)
Ingredients:
1.7 lb (800 g) beef chuck
2 cups (500 ml) red wine
2 carrots (7 oz / 200 g), sliced
1 onion, chopped
2 celery stalks, chopped
2 tbsp (30 ml) olive oil
2 cups (500 ml) beef broth
1 sprig rosemary
Salt and pepper
Instructions:
🥩 Brown beef in olive oil on all sides. Remove.
🥕 Sauté onion, carrot and celery until soft.
🍷 Return beef to pot, pour in red wine, add rosemary. Let it reduce.
🍲 Add beef broth, cover and simmer on low for 2–3 hours until tender.
✨ Serve with mashed potatoes or polenta.
