Blueberry Breakfast Quesadilla
Ingredients:
- 1 large flour tortilla
- 2 to 3 tablespoons cream cheese, softened
- 1/4 cup fresh blueberries
- 1 teaspoon honey or maple syrup (optional)
- A pinch of ground cinnamon (optional)
- Cooking spray or butter for skillet
Directions:
1. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of butter.
2. Spread the softened cream cheese evenly over one half of the flour tortilla.
3. Sprinkle the fresh blueberries over the cream cheese layer.
4. Drizzle honey or maple syrup and sprinkle a pinch of ground cinnamon over the blueberries if using.
5. Fold the tortilla in half to cover the filling and press gently.
6. Place the quesadilla in the skillet and cook for 2 to 3 minutes on each side, or until the tortilla is golden brown and the cream cheese is warmed.
7. Remove from skillet, cut into wedges, and serve immediately.
