Meat Lover’s Breakfast Casserole
This is a delicious breakfast casserole. Par cooking the veggies and potatoes-adds so much depth and flavor to the casserole.
~~Ingredients~~
1 pound bacon, cooked and crumbled
1 cup diced onions
3/4 cup diced bell pepper
6 cups diced red potatoes
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 pound Sausage, cooked and crumbled, I like the spicy
10 large eggs, beaten
1-1/3 cups milk
5 tablespoons butter, melted and cooled
16 oz. of Cheddar Cheese, grated, divided (or cheese of choice)
~~Instructions~~
Preheat oven to 350. Spray casserole dish with non-stick spray and set aside. Cook your bacon and take up on paper towels to drain and set aside. To the same skillet, over medium high heat, add your onions, peppers, potatoes, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Cooke for 5 minutes uncovered, stirring occasionally. Then cover and lower heat to simmer and cook for an additional 3 minutes. To your prepared casserole dish, add your potato mixture. Then chop or crumble your bacon and add to the potato mixture. Cook your sausage, take up on paper towels to absorb any excess oils, and pour over the potatoes and bacon.
In a large bowl, add your eggs, butter and milk and beat with a wire whisk until real fluffy. Then add 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add a hand full of freshly grated cheese to the egg mixture. Whisk to combine. Pour into your prepared casserole dish over your potatoes and meat mixture. Top with the remaining cheese.
Cover tightly with foil and bake for 45 minutes. Remove the foil, increase heat to broil, and cook til the top is golden brown. Remove from oven, and let it rest for 10 minutes. Then enjoy! Serving 8
