Butter Mints
Ingredients:
- 1 stick unsalted butter
- 1 tablespoon whipping cream
- 4 cups powdered sugar, divided (plus more for dusting)
- ½ teaspoon pure peppermint extract
- 1-4 drops food coloring (optional, for brighter color)
Directions:
1. Let the butter soften at room temperature until it is creamy.
2. In a mixing bowl, combine the softened butter and whipping cream until smooth.
3. Gradually add 3 ½ cups of powdered sugar, mixing well after each addition until the mixture forms a stiff dough.
4. Stir in the peppermint extract and food coloring if using, mixing until the color is evenly distributed.
5. Lightly dust a clean surface with powdered sugar and roll the dough out to about ¼ inch thickness.
6. Use a small cookie cutter or knife to cut the dough into mint-sized pieces.
7. Place the pieces on a parchment-lined baking sheet and allow them to dry at room temperature for several hours or overnight until firm.
8. Dust with additional powdered sugar before serving or storing in an airtight container.
