Garlic Butter Chicken Tortellini with Cajun Mozzarella Cream

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 tbsp olive oil
4 tbsp butter, divided
1 (20 oz) package of cheese tortellini
4 cloves garlic, minced
1 tsp garlic powder
1 tsp onion powder
2 tbsp Cajun seasoning
1/2 tsp salt
1/4 tsp black pepper
1 cup heavy cream
1/2 cup chicken broth
4 oz cream cheese, softened
8 oz mozzarella cheese, shredded
2 tbsp grated Parmesan cheese

Directions:

In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken pieces and season with garlic powder, onion powder, Cajun seasoning, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream and chicken broth, and bring to a simmer. Add the softened cream cheese and whisk until smooth.
Reduce the heat to low. Stir in the shredded mozzarella cheese and grated Parmesan cheese until melted and the sauce is smooth and creamy.
Meanwhile, cook the cheese tortellini according to package directions. Drain well.
Add the cooked tortellini to the skillet with the cheese sauce. Gently toss to coat the tortellini evenly with the sauce. Add the cooked chicken back to the skillet and stir to combine.
Serve immediately, ensuring each serving has plenty of creamy sauce and melted cheese.
