Vanilla Pecan Pralines
Ingredients:
- 2 cups granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup unsalted butter
- 1 cup heavy cream (or half-and-half)
- 2 cups pecan halves, lightly toasted
- 1 teaspoon pure vanilla extract
- Pinch of salt
Directions:
1. In a heavy-bottomed saucepan, combine granulated sugar, light brown sugar, butter, and heavy cream.
2. Cook over medium heat, stirring constantly, until the mixture reaches 238°F (soft-ball stage) on a candy thermometer.
3. Remove from heat and stir in the toasted pecans, vanilla extract, and a pinch of salt.
4. Beat the mixture vigorously with a wooden spoon until it thickens and becomes creamy.
5. Quickly drop spoonfuls of the mixture onto a parchment-lined baking sheet before it hardens.
6. Allow the pralines to cool and set completely at room temperature before serving.
