Mushroom, Shallot, and Herbed Goat Cheese Tarts
Ingredients:
For the Tarts:
1 sheet puff pastry, thawed
1 cup mushrooms, thinly sliced
2 shallots, thinly sliced
2 tbsp olive oil
4 oz herbed goat cheese
1/4 cup heavy cream
1 egg, beaten (for egg wash)
Fresh thyme leaves
Salt and pepper to taste
Instructions:
Prep the Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut it into 6-8 circles using a round cutter. Place the circles on a parchment-lined baking sheet.
Cook the Vegetables: In a skillet, heat the olive oil over medium heat. Add the shallots and cook until they start to caramelize, about 5 minutes. Add the mushrooms and cook until they are tender and any liquid has evaporated. Season with salt and pepper.
Prepare the Filling: In a bowl, mix the herbed goat cheese and heavy cream until smooth and creamy.
Assemble the Tarts: Spread a thin layer of the goat cheese mixture on each puff pastry circle, leaving a small border around the edges. Top with the mushroom and shallot mixture. Brush the edges of the pastry with the beaten egg.
Bake: Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
Garnish and Serve: Remove from the oven and sprinkle with fresh thyme leaves. Serve warm.
