Best Carrot Cake Ever π
This classic carrot cake is moist, flavorful, and topped with creamy goodness. Itβs sure to be a crowd-pleaser!
Ingredients
β’ 6 cups grated carrots
β’ 1 cup brown sugar
β’ 1 cup raisins
β’ 4 eggs
β’ 1 1/2 cups white sugar
β’ 1 cup vegetable oil
β’ 2 tsp vanilla extract
β’ 1 cup crushed pineapple (drained)
β’ 3 cups flour
β’ 1 1/2 tsp baking soda
β’ 1 tsp salt
β’ 4 tsp cinnamon
β’ 1 cup walnuts
Directions
1οΈβ£ Mix carrots and brown sugar, let sit for 1 hour, then add raisins.
2οΈβ£ Preheat oven to 350Β°F. Grease two 10-inch pans.
3οΈβ£ Beat eggs, sugar, oil, vanilla, and pineapple together.
4οΈβ£ Add dry ingredients (flour, baking soda, salt, cinnamon) to wet mixture.
5οΈβ£ Fold in carrot mixture and walnuts.
6οΈβ£ Bake for 45-50 minutes or until a toothpick comes out clean.
7οΈβ£ Cool for 10 mins, then transfer to racks.
Frosting (Optional)
β’ 1/2 cup butter, softened
β’ 8 oz cream cheese, softened
β’ 4 cups powdered sugar
β’ 2 tsp vanilla extract
1οΈβ£ Beat butter, cream cheese, and powdered sugar. Add vanilla.
