Dirty Martini Pasta Salad πΈππ₯
Ingredients:
250g pasta (penne or fusilli works best)
1/2 cup green olives (sliced)
1/4 cup black olives (sliced)
1/4 cup pickled onions (or pearl onions)
1/4 cup olive brine (from the jar)
2 tbsp gin or vodka (optional for a true martini twist)
1/4 cup extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
Grated parmesan cheese (optional)
Instructions:
Cook the pasta according to the package instructions. Drain and let it cool.
In a large bowl, whisk together the olive brine, olive oil, lemon juice, mustard, gin (if using), salt, and pepper.
Add the cooled pasta, green olives, black olives, and pickled onions to the bowl. Toss everything together until well coated.
Garnish with chopped parsley and parmesan cheese, if desired.
