Pickling Vinegar
It's not what you may think it is.
Pickling vinegar is a vinegar blend that contains water, sugar, salt, and flavoring,
It is also only 2.5% acidity.
All vinegar used in pickling should be 5% acidity. It is best to be consistent with the vinegar you use and add your own sweetener, as called for in tested recipes.
