The Best Mini Cinnamon Rolls
Ingredients:
For the Dough:
2 3/4 cups all-purpose flour
1/4 cup sugar
2 tablespoons unsalted butter
1 egg
1 tablespoon instant yeast
1/2 cup water
1/4 cup whole milk
1 teaspoon salt
For the Filling:
1/4 cup butter, melted
2/3 cup brown sugar
1 tablespoon cinnamon + 1 teaspoon
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
4 oz cream cheese, room temperature
1/4 cup unsalted butter, room temperature
1 cup powdered sugar
1-2 tablespoons whole milk (adjust for desired thickness)
1/2 teaspoon vanilla extract
Instructions:
In a large bowl or the bowl of a stand mixer, combine the flour, yeast, and salt.
In a microwave-safe bowl, mix the sugar, butter, water, and milk. Heat in the microwave until hot and the butter is almost melted (about 1 minute on high). Let the mixture cool to 120°F. Gradually add the warm milk mixture to the flour mixture. Add the egg and mix until a soft, sticky dough forms.
Preheat the oven to 200°F.
If using a stand mixer, switch to the dough hook and knead on low for 4 minutes until elastic. Alternatively, knead by hand on a lightly floured surface for 3-4 minutes. Cover the dough with plastic wrap and let it rest for 10 minutes.
Roll the dough on a lightly floured surface into a 24x16-inch rectangle. In a small bowl, combine the brown sugar, cinnamon, and vanilla for the filling. Spread the melted butter evenly over the dough and sprinkle the filling mixture on top. Using a pizza cutter, cut the dough into 24 strips. Roll each strip tightly to form mini rolls.
Arrange the rolls in a greased 9x13-inch baking dish and cover loosely with aluminum foil. Turn off the oven and place the covered rolls inside to rise for 45 minutes.
Remove the rolls from the oven and preheat to 375°F. Uncover and bake for 15-18 minutes, or until the centers are lightly golden brown.
While the rolls are cooling, prepare the frosting by combining cream cheese, butter, powdered sugar, milk, and vanilla in a small bowl. Beat until smooth. Spread the frosting over the warm rolls and serve.
