Seared Cod & Scallops with Garlic Butter Veggies 🐟🥕
Fine dining vibes with bold flavors and creamy comfort!
📝 Ingredients:
1 cod fillet
4 large sea scallops
1 tbsp olive oil
Salt & black pepper to taste
1/2 lb baby potatoes
1 cup baby carrots
1/4 cup mashed potatoes
2 tbsp unsalted butter
2 garlic cloves, minced
1 tsp fresh thyme or parsley, chopped
🍽️ Directions:
1️⃣ Boil & Sauté Veggies:
Boil baby potatoes and carrots until fork-tender (10–12 mins). Drain and toss in a pan with butter, garlic, salt, pepper, and herbs for 2–3 mins. Set aside.
2️⃣ Sear the Cod:
Pat cod dry, season with salt and pepper. Sear in hot olive oil, 3–4 minutes per side, until golden and flaky. Set aside to rest.
3️⃣ Sear the Scallops:
In the same pan, sear scallops (dry them first!) 1–2 minutes per side until they form a nice golden crust.
4️⃣ Warm the Mash:
Reheat or prepare mashed potatoes with butter and seasoning to taste.
5️⃣ Plate & Serve:
Spoon mashed potatoes on the plate, top with cod and scallops. Serve with garlic butter-coated baby potatoes and carrots. Garnish with fresh herbs.
