Delicious Strawberry Loaf Cake 🍓🍰
Ingredients:
For the Cake:
1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup (120ml) sour cream or Greek yogurt
1 cup (150g) fresh strawberries, diced
1 tbsp flour (to coat strawberries and prevent sinking)
For the Glaze (Optional):
½ cup (60g) powdered sugar
1 tbsp strawberry puree or lemon juice
Instructions:
1. Prepare the Batter:
Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract and sour cream (or Greek yogurt).
Gradually add the dry ingredients, mixing until just combined.
Toss diced strawberries with 1 tbsp of flour, then gently fold them into the batter.
2. Bake the Cake:
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
3. Make the Glaze (Optional):
Mix powdered sugar with strawberry puree or lemon juice until smooth.
Drizzle over the cooled loaf cake.
