🍋 Lemon Ricotta Spinach Pasta 🌿
Ingredients:
8 oz pasta (spaghetti, fettuccine, or your favorite type)
1 tbsp olive oil
2 cloves garlic, minced
4 cups fresh spinach
1 cup ricotta cheese
½ cup parmesan cheese, grated
Zest of 1 lemon
2 tbsp fresh lemon juice
½ tsp salt
¼ tsp black pepper
Red pepper flakes (optional, for a kick)
Fresh parsley (for garnish)
Extra parmesan cheese (for topping)
Instructions:
1️⃣ Cook the pasta according to package instructions. Reserve 1 cup of pasta water, then drain the rest and set aside.
2️⃣ In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute, until fragrant.
3️⃣ Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
4️⃣ Lower the heat, then stir in the ricotta cheese, parmesan cheese, lemon zest, lemon juice, salt, and black pepper.
5️⃣ Add the cooked pasta to the skillet and toss to combine. If the mixture is too thick, add a little reserved pasta water until you reach your desired consistency.
6️⃣ If you like a bit of spice, sprinkle some red pepper flakes to taste.
7️⃣ Plate the pasta and garnish with fresh parsley and extra parmesan cheese.
