Mini Quiche
Ingredients:
1 refrigerated pie crust (or homemade)
4 large eggs
1/2 cup milk
1/2 cup shredded cheese (cheddar, Swiss, or your choice)
1/2 cup cooked and crumbled bacon or diced ham
1/4 cup diced onions or bell peppers (optional)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
Instructions:
Preheat oven to 375°F (190°C). Grease a mini muffin tin.
Roll out pie crust and cut into small circles to fit into the muffin tin cups. Press into each cup.
In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
Divide cheese, bacon/ham, and veggies among the muffin cups.
Pour the egg mixture evenly into each cup, filling almost to the top.
Bake for 18–20 minutes, or until the quiches are set and golden.
Let cool slightly before removing. Serve warm.
