Maple Pecan Overnight Oats
Ingredients:
2 tbsp pure maple syrup
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1 cup rolled oats
1 cup unsweetened almond milk (or milk of choice)
1/2 cup plain Greek yogurt
1/4 cup chopped pecans
1 tbsp chia seeds (optional)
A pinch of salt
Optional Toppings:
Additional chopped pecans
Drizzle of maple syrup
Fresh fruit (e.g., sliced banana or berries)
Directions:
Combine Ingredients:
In a medium-sized bowl or mason jar, mix together the rolled oats, almond milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, chia seeds (if using), and a pinch of salt. Stir well to combine.
Add Pecans:
Gently fold in the chopped pecans.
Chill Overnight:
Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Let it sit overnight (or at least 6 hours) to allow the oats to soak and soften.
Serve:
In the morning, give the oats a good stir. Add a splash of milk if the mixture seems too thick.
Top and Enjoy:
Transfer the oats to serving bowls (if not already in a jar) and add your desired toppings: extra pecans, a drizzle of maple syrup, or fresh fruit for added sweetness and texture.
