Honey Cinnamon Roasted Sweet Potatoes
Ingredients:
4 medium sweet potatoes, peeled and cut into chunks
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Directions:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
In a large bowl, combine the sweet potato chunks with honey, olive oil, cinnamon, salt, and black pepper. Toss until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 30-35 minutes, flipping halfway through, until the edges are caramelized and the potatoes are fork-tender.
