🛒 Ingredients:
For the chicken & sauce:
500g chicken breast or thighs, cut into chunks 🍗
2 tbsp olive oil 🫒
3 cloves garlic, minced 🧄
1 tsp dried thyme or Italian seasoning 🌿
Salt & black pepper to taste 🧂
1/2 cup chicken broth 🍲
1 cup heavy cream 🥛
1/4 cup grated Parmesan cheese 🧀
Fresh parsley, chopped (for garnish) 🌿
For the potatoes:
500g baby potatoes, halved 🥔
1 tbsp olive oil 🫒
Salt & pepper to taste 🧂
👩🍳 Instructions:
Preheat oven to 200°C (390°F). Toss halved baby potatoes with olive oil, salt, and pepper. Roast for 25 minutes until golden and crispy. Meanwhile, season chicken with salt, pepper, and herbs. Sear in a hot skillet with olive oil until browned. Add garlic and cook for 1 minute. Pour in chicken broth and reduce slightly. Stir in cream and Parmesan, simmer until thick and creamy. Add back the roasted potatoes, let them soak slightly in the sauce, and garnish with parsley before serving.
