Surf-and-Turf Linguine with Garlic Butter Sauce
Ingredients:
For the Pasta:
12 oz linguine pasta
Salt, for pasta water
2 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup white wine (optional)
1/2 cup heavy cream
Salt and pepper, to taste
1/4 teaspoon red pepper flakes (optional)
1 cup fresh spinach leaves
1 tablespoon chopped parsley (for garnish)
For the Beef and Shrimp:
1 lb beef tenderloin or sirloin steak, cut into bite-sized chunks
8 large shrimp, peeled and deveined
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon butter (for searing)
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the white wine (if using) and let it reduce for 1-2 minutes.
Stir in the heavy cream and red pepper flakes, then simmer for 2-3 minutes. Season with salt and pepper to taste. Add the cooked linguine to the skillet, tossing it in the garlic butter sauce. Add reserved pasta water as needed to reach your desired sauce consistency. Toss in the fresh spinach leaves, allowing them to wilt. Keep the pasta warm while you cook the meat and shrimp.
Prepare the Beef:
Season the beef chunks with salt and pepper.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef chunks and sear them for 2-3 minutes on each side until caramelized and cooked to your desired level of doneness (medium-rare is ideal for tender beef). Remove from the skillet and set aside.
Cook the Shrimp:
Season the shrimp with salt and pepper.
In the same skillet, add a bit more olive oil if needed, and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque, with a slight char on the edges. Remove from the skillet and set aside.
Assemble the Dish:
Plate the garlic butter linguine in a shallow dish, creating a nest-like shape with the pasta.
Arrange the seared beef chunks and grilled shrimp on top of the pasta, scattering them evenly.
Drizzle any remaining garlic butter sauce over the top and garnish with freshly chopped parsley.

Serve immediately, accompanied by a fork on the side to complete the elegant presentation.
