Ingredients
For the Filling:
• 🥩 500g stewing beef, diced
• 🧅 1 large onion, finely chopped
• 🥄 2 tbsp plain flour (for coating)
• 🧈 25g butter
• 🥣 400ml beef stock
• 🌿 1 tsp fresh thyme, chopped
• 🧂 Salt and black pepper, to taste
For the Suet Pastry:
• 🥄 250g self-raising flour
• 🧈 125g suet (vegetarian or beef)
• 💧 ~150ml cold water
• 🌽 Cornflour (for dusting)
• 🧈 Butter (for greasing basin)

Method
1️⃣ Prepare the Filling
• Toss diced beef in flour, shaking off excess.
• In a pan, melt butter over medium heat and brown the beef. Remove and set aside.
• Sauté onions in the same pan until soft. Return beef, add stock and thyme.
• Simmer for 1 hour or until beef is tender. Let cool slightly.
2️⃣ Make the Suet Pastry
• In a bowl, mix flour, suet, and a pinch of salt.
• Gradually add cold water and mix into a soft dough.
• Reserve ¼ of the dough for the lid. Roll out the rest into a circle to line your greased 1-litre pudding basin.
3️⃣ Assemble the Pudding
• Line the basin with pastry, pressing it into the edges and leaving overhang.
• Add the cooled beef and onion filling.
• Roll out the reserved dough to make a lid. Moisten edges and seal. Trim excess pastry.
4️⃣ Steam the Pudding
• Cover the basin with greaseproof paper and foil, tie with string.
• Place in a large pot with boiling water halfway up the sides.
• Cover and steam gently for 2.5–3 hours, topping up water as needed.
5️⃣ Serve
• Carefully remove from pot and rest for 5 minutes.
• Turn out onto a plate and serve with gravy, mash, and peas.
