EASTER MINI EGG CHEESECAKE
You Will Need (Crust):
1½ cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
Filling:
16 oz (2 packs) cream cheese, softened
1/2 cup sugar
1 tsp vanilla extract
2 large eggs
1/2 cup sour cream
1 cup crushed mini chocolate eggs (Cadbury Mini Eggs work great)
Topping (Optional):
Whipped cream
Extra mini eggs for decoration
Instructions:
1. Preheat oven to 325°F (160°C).
2. Mix crust ingredients and press into the bottom of a 9-inch springform pan. Bake for 8 minutes, then cool.
3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until creamy.
4. Fold in crushed mini eggs.
5. Pour over the crust and smooth the top.
6. Bake for 40–45 minutes. Center should jiggle slightly.
7. Cool, then chill for at least 4 hours or overnight.
8. Decorate with whipped cream and more mini eggs.
