BLT Avocado Pasta Salad

Ingredients:

8 ounces (about 225g) rotini pasta
1 cup cherry tomatoes, halved
6 slices bacon, cooked and crumbled
1 avocado, diced
1/4 cup chopped fresh parsley
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper, to taste
Optional: additional chopped parsley for garnish
Instructions:

Cook the rotini pasta according to the package instructions until al dente. Drain and rinse with cold water to cool.
In a large bowl, combine the cooked pasta, halved cherry tomatoes, crumbled bacon, diced avocado, and chopped parsley.
In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, and pepper until well combined.
Pour the dressing over the pasta salad and toss until everything is evenly coated.
