Chickpea and Avocado Salad 🥗
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped (optional)
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp garlic powder
Salt and pepper to taste
Directions:
In a large bowl, combine the chickpeas, diced avocados, cherry tomatoes, red onion, and cilantro.
In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
Pour the dressing over the salad and gently toss everything together to coat well.
Taste and adjust seasoning if needed. Serve immediately or chill for 10-15 minutes before serving for extra flavor.
