Best Potato Salad
Ingredients:
2 lbs potatoes (Yukon Gold or red potatoes work best)
1 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
2 hard-boiled eggs, chopped
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
1 tsp paprika (for garnish)
Directions:
Cook the potatoes: Wash and peel the potatoes if desired. Cut them into bite-sized chunks and place them in a large pot. Fill the pot with water, ensuring the potatoes are covered, and bring it to a boil. Cook for about 10-15 minutes, or until the potatoes are tender but not falling apart. Drain and let them cool.
Prepare the dressing: In a small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
Assemble the salad: Once the potatoes have cooled, place them in a large mixing bowl. Add the chopped eggs, celery, onion, and parsley. Pour the dressing over the mixture and gently fold everything together.
Chill and serve: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld. Sprinkle with paprika just before serving.
