Niçoise Salad Recipe
Ingredients:
1 can of tuna (in olive oil or water), drained
2 medium potatoes, boiled and chopped
2 hard-boiled eggs, halved
1 cup green beans, blanched
6–8 cherry tomatoes, halved
1/2 cucumber, sliced
Black olives (Kalamata or similar)
Lettuce or mixed greens
Salt & black pepper (to taste)
For the Dressing:
3 tbsp olive oil
1 tbsp lemon juice or red wine vinegar
1 tsp Dijon mustard
1 garlic clove, minced (optional)
Salt & pepper to taste
Instructions:
Prepare Ingredients:
Boil potatoes and eggs. Let them cool, then cut into chunks or halves.
Blanch green beans in boiling water for 2–3 minutes, then cool in ice water.
Drain the tuna and break it into chunks.
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice (or vinegar), Dijon mustard, garlic (if using), salt, and pepper.
Assemble the Salad:
Arrange the lettuce on a large plate or bowl.
Add potatoes, green beans, cucumber, cherry tomatoes, olives, and eggs.
Top with tuna in the center.
Drizzle with dressing and serve immediately.
